Organic Soul Special: Dum Biryani

🛒 Ingredients (Serves 4)

Main Ingredients:

  • 2 cups basmati rice (soaked 30 minutes)
  • 500 g vegetables (peas, beans, carrots, cauliflower) OR chicken/mutton
  • 2 onions, thinly sliced
  • 2 tomatoes, chopped
  • ½ cup curd (yogurt)
  • 2 tbsp Organic Soul Ghee / Oil
  • 1 tbsp ginger-garlic paste
  • Salt to taste
  • Fresh mint & coriander leaves

Organic Soul Whole Garam Masala (for authentic flavor):

  • 1 tsp cumin seeds
  • 2 large cardamoms
  • 6–8 black peppercorns
  • 2 cinnamon sticks
  • 2–3 pipli (long pepper)
  • 1 small piece jaiphal (nutmeg)
  • 2–3 petals javitri (mace)
  • 1 piece dry ginger
  • 3–4 cloves
  • 1 bay leaf

👩🍳 Method

Step 1: Prepare Rice

  1. Boil water with salt and half of the Organic Soul Whole Garam Masala.
  2. Add soaked basmati rice and cook until 80% done. Drain and keep aside.

Step 2: Make the Masala

  1. Heat Organic Soul ghee in a heavy-bottom pan.
  2. Add the remaining Whole Garam Masala and let it release its aroma.
  3. Add onions and sauté until golden brown.
  4. Stir in ginger-garlic paste, tomatoes, and curd. Cook until oil separates.
  5. Add vegetables or meat, salt, and cook until tender.

Step 3: Dum Cooking

  1. In a thick-bottomed vessel, layer rice and masala alternately.
  2. Garnish with mint, coriander, and fried onions.
  3. Cover tightly (seal with dough if possible) and cook on low flame for 20 minutes.
