
🛒 Ingredients (Serves 4)
Main Ingredients:
- 2 cups basmati rice (soaked 30 minutes)
- 500 g vegetables (peas, beans, carrots, cauliflower) OR chicken/mutton
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- ½ cup curd (yogurt)
- 2 tbsp Organic Soul Ghee / Oil
- 1 tbsp ginger-garlic paste
- Salt to taste
- Fresh mint & coriander leaves
Organic Soul Whole Garam Masala (for authentic flavor):
- 1 tsp cumin seeds
- 2 large cardamoms
- 6–8 black peppercorns
- 2 cinnamon sticks
- 2–3 pipli (long pepper)
- 1 small piece jaiphal (nutmeg)
- 2–3 petals javitri (mace)
- 1 piece dry ginger
- 3–4 cloves
- 1 bay leaf
👩🍳 Method
Step 1: Prepare Rice
- Boil water with salt and half of the Organic Soul Whole Garam Masala.
- Add soaked basmati rice and cook until 80% done. Drain and keep aside.
Step 2: Make the Masala
- Heat Organic Soul ghee in a heavy-bottom pan.
- Add the remaining Whole Garam Masala and let it release its aroma.
- Add onions and sauté until golden brown.
- Stir in ginger-garlic paste, tomatoes, and curd. Cook until oil separates.
- Add vegetables or meat, salt, and cook until tender.
Step 3: Dum Cooking
- In a thick-bottomed vessel, layer rice and masala alternately.
- Garnish with mint, coriander, and fried onions.
- Cover tightly (seal with dough if possible) and cook on low flame for 20 minutes.
